      The Garza family, founders of Siete Foods, known for its grain-free tortillas, share inviting yet healthful recipes in this versatile collection of grain-free fare. Classics such as arroz con pollo, fish tacos, and the tomato-noodle soup known as sopa de fideo stay close to tradition, while seafoodless ceviche employs “fresh, briny” hearts of palm, and a grain-free beef Milanesa—akin to schnitzel—is given a crunchy coating via ground almond-flour tortilla chips. Even refried beans get a makeover, sprouted for a few days beforehand to gain nutrition, then cooked with coconut oil and seasoning. Key techniques are explained with sprinklings of puns, lending a convivial tone: An hour’s salting and rinse of the paddles for nopalito helps retain their bright, “fan-cactus addition” of color.
